Let's get this straight. I don't bake banana bread because I won't eat an entire frosting-slathered loaf. I usually don't bake banana bread because I WILL eat an entire frosting-slathered loaf. Herein lies the problem.
Once again, I do not understand people who don't like food. Who don't think about food all day long. I'm plotting dinner on Thursday night before I go to sleep on Wednesday night. I thought about this frosting all-the-day-long. And then I dug in.
It's a hard life...
...when you have to eat frosting with a spoon.
Peanut Butter and Cream Cheese Frosting
makes 3 cups
I put it on banana bread
1 8oz block cream cheese, softened (I used "1/3 less fat". Ha ha ha.)
1 t. vanilla
1/2 c. peanut butter
3 T. butter, softened
1/4 cup milk (or more as needed)
3-4 cups powdered sugar (or more if needed for desired consistency)
With an electric mixer, cream the cream cheese, butter, peanut butter and vanilla together. Add half the milk. Start adding in the powdered sugar, one cup at a time, and alternating with the milk if needed.
Slather onto your favorite cake, brownies, or cookies. Store in the refrigerator for up to 1 week.
